Seasoning your onions

The twiggy herbs, such as rosemary, thyme, and bay, have an elemental pull toward the onion, as do beef stock, white wine, and butter. Onions and cheese have a longstanding affair with one another, especially the more piercingly flavored farmhouse varieties. Onions flatter all meat and poultry and have a deepening effect on the flavor of most vegetables. So useful and versatile is the onion that it would probably be easier to say what doesn’t go particularly well with it. I say probably, because it is surprisingly difficult to think of anything, at least in a savory sense.
